White Wine-Artichoke Goat Cheese Dip

Let's talk about cheese, my friends. This is specifically directed at any gentlemen who happen to be reading this blog post, because I'm about to give you a little sumthin'-sumthin' that's going to change your dating life forever.

Yep, it's that easy. Case in point - the last guy I dated. He cooked me mac & cheese on our 4th date, and I immediately deleted* all dating apps from my phone and decided I was off the market.

*Read: moved them to the 4th page of apps and turned off notifications. It's a process. Tinder is bae.

And, when you throw wine into the equation? Woooah, nelly. Wine is like the bat signal for females. We can sniff it from miles away, and hear the sound of a cork popping from even further. It's not long til women start turning up on your doorstep like stray cats, purring and asking for a glass of whatever you're pouring.

So, Jess, where are you even going with this? I'm glad you asked, gents! This dip contains cheese AND wine. It's catnip for your everyday female, and it's what is going to buy* YOU love. And, if you serve it along some wine and fresh carbs? Be prepared to fight 'em off. The thots are out to play.

White Wine-Artichoke Goat Cheese Dip

To make this dip, you will need:
- 1 T olive oil
- 1/2 yellow onion, diced finely
- 1 T butter, salted
- 1/2 cup artichokes (mine were pre-marinated, but you can use plain and add additional seasoning to the dip)
- 4 oz goat cheese
- 1 cup mozzarella cheese
- 1/4 cup Sauvignon Blanc (this was $4 at Trader Joe's - mama has to pay the bills)
- 1 T lemon juice
- 1 t salt
- All the Italian spices you could ever dream of, to taste

Alright alright alright! You'll start off by preheating your oven to 350F and locating an 8x8 casserole dish. Set aside.

In a saucepan, heat the olive oil over medium heat, and then add the diced onions and butter. Saute these for several minutes until caramelized - i.e. golden-brown and tender. Once the onions are caramelized, add the artichokes and heat through for 1-2 minutes, stirring frequently.

Now, it's cheese time!! The best time of the day. Add the goat cheese to this mixture and stir until it begins to melt. The dip will be thick - this is ok. This is why we have wine (literally). Add the Sauvignon Blanc and lemon juice, and then stir until smooth like butta. Finally, add in your mozzarella and the salt/spices to taste. Yep, you should taste it. For safety reasons, you know. In case it was poisoned. MOVING ON.

Transfer the dip into a casserole dish, sprinkle some additional mozzarella across the top, and stick it in the oven for 5 minutes. While you wait, pour yourself a glass of that Sauvignon Blanc and assemble your dippers. You know - some bread, pretzels, SPOONS, crackers - the usual. Once it's done, serve immediately! And, be warned - it won't last long.
