Fresh tomatoes, basil and onion are tossed with a blend of Italian spices and olive oil to create a fresh and flavorful topping for toasted baguette slices. These bruschetta are the perfect appetizer or party treat!
Here it is, friends! The first recipe of 2018! And it certainly is a good one, if I do say so myself.
But, before we get to the recipe - tell me how your New Years was! Did you hit up bars? Chill at house parties? Stay in, wearing sweatpants and drinking champagne? All of the above sound like phenomenal options (although I'm not allowed to do the bar thing on New Years anymore - not since I cried and tried to leave before midnight last year, and fell down the stairs at Public two years ago).
My friends and I decided to go the house party route, so I had my friends Madison and Katie over for a pregame before heading to a party at my dear friend Clay's and then to a house of UVA guys that I was friends with in college. Of course, no New Years pregame is complete without a slew of party snacks, so we whipped up an Italian spread - Caprese Salad, a Charcuterie Board, this Bruschetta, and Chocolate Cream Puffs (recipe coming Friday!). Served alongside some prosecco, Stella and jello shots, it was everything we could have wanted before our night out!
Following our pregame, we headed to Clay's house, where we drank incredibly strong homemade White Russians, posed with safari animal photo booth cutouts, took charge of the music, and made new friends over free-flowing champagne.
Around 10 PM, we headed back to my neighborhood to attend a UVA grad party that was, essentially, ALL guys from a frat I spent entirely too much time at my sophomore year of college. GOOD CHOICES. We had an amazing time regardless, rang in the New Year at midnight trapped in a stairwell with no kisses, and then stumbled home around 12:30 to greet our Uber Eats driver, bearing loads of McDonalds. We ended the night still dressed in our New Years finest, huddled on my floor, eating chicken tenders and fries and sipping cokes and talking about our night.
I couldn't have asked for a better start to 2018 than being surrounded by my loved ones, and it has definitely set the tone for an incredible year! So, lesson learned: incredible years start with incredible bruschetta (great segway, right?). Let's gather our ingredients!
A good baguette, some olive oil, and garlic salt for the bread. Some tomatoes, onion, basil, olive oil and Italian seasoning (I found this Bruschetta blend at a farmers market in Venice but you can use any blend that suits your fancy or make your own!) for the bruschetta topping.
Simply slice your baguette into rounds, brush with a mixture of olive oil and garlic salt, and pop into the oven at 375F for 10 minutes.
While the bread toasts, dice up some tomatoes, 1/4 red onion, and fresh basil, then toss together with your spice blend and olive oil. Mix well to help all the flavors come together.
Once the bread is golden brown and toasty, all you have to do is scoop and serve!
