As you may know, I am the loving host of trivia at Penn Social every Tuesday, and I freaking ADORE this job. I get to DJ, make friends, get people drunk, and essentially throw a party every Tuesday night. I've made (and continue to make) friends - and these friends and I have, for whatever reason, decided to implement a post-trivia tradition by the name of Irish Trashcan Tuesday. It is EXACTLY what it sounds like.
If you have ever had an Irish Trashcan, you know that the intoxicating blend of vodka, gin, rum, peach schnapps, blue curacao, and Red Bull can leave you feeling a LITTLE worse for wear the next morning. So, having a delicious breakfast ready to go becomes increasingly important. Enter, this banana bread! Healthy (fruit & whole wheat flour) meets decadent (those white chocolate chips though) in the perfect, easy, patriotic quick bread.
So, what are you up to this tuesday?
Red, White, and Blueberry Banana Bread
To make this banana bread, you will need:
- 2 cups white whole wheat flour
- 1 t baking soda
- Pinch salt
- 3/4 cup granulated sugar
- 1/4 cup low fat buttermilk
- 1/4 cup canola oil
- 2 eggs
- 3 overripe bananas, medium to large, mashed
- 1 t almond extract
- 1 cup mixed berries (I used blueberries and diced strawberries)
- 1/2 cup white chocolate chips
First, preheat your oven to 350F and line a 9x5" loaf pan with parchment paper.
In a small bowl, whisk together your flour, baking powder, and salt. Set aside.
In a medium bowl, mix together your granulated sugar, butter, and oil. Add in eggs and almond extract and combine well. Add your mashed bananas and combine.
Stir in your flour mixture, just until no streaks of flour remain, then stir in your strawberries, blueberries, and white chocolate chips. Spread the batter in your prepared loaf pan and bake for 50-55 minutes, until the top is golden brown and a toothpick inserted in the bread comes out clean. Let cool, then remove from the loaf pan, slice, and serve!
