Double chocolate brownies are spiked with Kahlua and topped with a Kahlua-chocolate ganache. Irresistible, decadent, and perfect straight from the fridge on a hot summer day!
New Years Day 2017.
I sat with my friends Keegan and Rachel at Matchbox on 14th Street, barely touching the vegetable frittata in front of me. Complimentary skillet cinnamon rolls sat, growing cold, in the center of the table. My burgeoning hangover was certainly a factor of my silence and lack of appetite, but there was more.
The evening before - New Year's Eve, a night of glitz and glitter, had been one of the worst of the year. Not that anything in particular happened, and I still can't put my finger on it. Maybe it was that we started drinking at 11 AM and I was too tired when the evening rolled around? Maybe it was because I didn't feel like I had gotten my money's worth from the $100 open bar ticket? More likely, though, it was because the group of people I was out with was comprised completely of couples. My house? All couples. I was surrounded by pairs, and - having broken up with my boyfriend just a weekend prior - I couldn't handle it.
Luckily, Keegan and Rachel are the best friends a girl can ask for, and before long I was back to my old self. Once we settled up the check, Rachel went to Nellie's to fetch the ID she had left there the night before (lol) while Keegan and I traipsed off to his apartment, vowing that we would never drink again.
Or for the next week.
Or... until we grabbed iced lattes from The Wydown and made boozy iced frappuccinos? Yep, that's more like it.
We grabbed the coffees, headed up to Keegan's apartment, and threw them into his Nina blender along with a healthy helping of Kahlua, Amarula, and Bailey's. 30 seconds later, I had every 12-year-old white betch's dream beverage - a boozy frappuccino! We took them up to the roof with a 6-pack of Blue Moon, invited over our friend Clay, and before you knew it, all my problems had gone away.
Lesson learned - Kahlua solves all.
(So does escaping to Ft. Lauderdale, Miami, and the Florida Keys, and then moving to a house in Dupont with a bunch of single young ratchets who better understand my lifestyle).
Kahlua Ganache Brownies
To make these brownies, you will need:
- 1 batch brownies (I used a box of Ghirardelli Double Chocolate brownie mix, and subbed the water for Kahlua) (you could use a homemade brownie recipe if you're ambitious) (I am not)
- 1 cup semisweet chocolate chips
- 2 T Kahlua
- 1 T butter
- 2/3 cup minus 2 T heavy cream
Spray an 8x8" pan (or a circle pan if you can't find yours like me #ratchet) with baking spray, and preheat the oven to 325F. Prepare the brownies according to package directions, subbing Kahlua for the water.
Once the brownies have finished cooking, combine the chocolate chips with the Kahlua and butter in a medium bowl. Heat the heavy cream in a pot over the stove until almost boiling, then pour over the chocolate chip mixture. Cover with plastic wrap and let sit for 10 minutes, then stir until smooth. Let cool 10 minutes.
Pour the ganache over the brownies, cover the pan with plastic wrap, then let set in the fridge for at least 3 hours. IT'S HARD, I KNOW - but worth it! Once it's set, dig in!
See? Chocolate, alcohol... watch all your worries disappear before your eyes.
