Fresh Garlic Tomato Sauce + Zoodles (Vegetarian & Gluten Free)

Zucchini noodles are topped with a fresh, homemade garlic butter tomato sauce and balls of fresh mozzarella. A gluten free dish that is bursting with summer flavor!

It's Friday and you deserve homemade tomato sauce so you're GETTING homemade tomato sauce, capiche?

Tomatoes are so good right now, fam. I hit up the Dupont Circle farmer's market on Sunday and I was surrounded on ALL SIDES by plump, juicyyyyy red 'maters. Also by dogs. Honestly it's a miracle I noticed a single thing that wasn't a dog or a very attractive male walking a dog... but I did so you KNOW these tomatoes are cray.

This got me thinking to things that went well with tomatoes for me to scope out on my farmer's market mission. GARLIC. Have it. CHEESE. Cheaper at TJs. SPAGHETTI? Not at the market, but... there were a million and a half zucchini... zucchini noodles? Excellent.

I know, I'm brilliant, please hold your applause for the end.

So, I rounded up my goodies, located my car, and drove myself out to my parents' place in Vienna so I could steal their (much larger) kitchen and also take advantage of their tv to catch up on Love Connection. Is this the 3rd post I've mentioned that show in? Yep. It's FINE, I'm FINE.

This recipe is super delicious but the annoying part is that if you have an obsessed mama in the room with you she will spend the whole. entire. time. going OMG THAT SMELLS SOOO GOOD AGH which is like fine the first time but incredibly annoying the subsequent NINETY-SEVEN.

Fresh Garlic Tomato Sauce + Zoodles

To make this dish, you will need:
- 1 pint cherry tomatoes
- 1 clove garlic, minced
- 1 T butter
- 1 T balsamic vinegar
- 1 zucchini
- 1/4 cup fresh mozzarella balls (the kind I bought at Giant was called "snacking mozzarella" but honestly what kind of mozzarella isn't?!)

Heat a dry skillet over high heat and add the cherry tomatoes. Cook, stirring occasionally, until the skins of the tomatoes begin to char. Add 1/2 T butter (carefully, it will pop!) and stir.

Squish the tomatoes using a spoon to release their juices. Add the garlic, vinegar and remaining butter, reduce heat to medium, and continue to cook until saucy. Remove from heat.

Use a spiralizer or vegetable peeler to create noodles from the zucchini. Layer on the tomato sauce and mozzarella balls, then serve! 

Easy, cheesy, (mostly) healthy, and ready in a pinch for your lunch and dinner needs. You're welcome in advance, fam.
