I've said it before and I'll say it again (right here) (right now) - I LOVE making my own birthday treats.
I don't think it's "sad" as the haterz say - I think it's so much fun to whip up something totally over the top and have a blast in the kitchen, doing what I love most - baking and experimenting! So, when I turned 24 this past Friday, I knew I needed to get my hands dirty in the kitchen and make something festive. As such, these funfetti cookies were born, with ALL the bells, whistles, and chocolate. Yum.
You see, my birthday didn't get off to the most glamorous start. After feeling incredibly sick all day on Thursday, I mustered up the strength to go host trivia at Roofers Union. Since I hadn't really eaten all day, I decided I would have one drink max and then go to bed.
^Things that work for people who don't have my friends. Because, amazing humans that they are, they took me out on a little bar crawl of Adams Morgan post-trivia... and drinking on an empty stomach led to me spending all of my birthday feeling like I had been hit by a bus. Yay.
Luckily, I work from home on Fridays, so I was able to get work done through my struggle, then pull myself together enough to get dinner and margs at Lauriol Plaza with my friends Amanda and Chris. Post-two pitchers of sangrita swirl, we headed back to my place to pregame, then to a birthday party at Saufhaus before I died and needed to go home to repeat the whole hangover process again the next day. What can I say? I make good choices.
What I will say is that, after two days of not being able to eat or to keep food down, these cookies were HEAVENLY. And I implore you to make them, whether you're celebrating a birthday, a recovery from a massive hangover, or just the fact that you made it through another week.
Funfetti Celebration Cookies
To make these cookies, you will need:
- 1 cup all purpose flour
- 3/4 cup funfetti cake mix
- 1/2 t baking soda
- Pinch salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup light brown sugar, packed
- 1 egg
- 1 t vanilla
- 1 cup birthday cake oreos, crushed into chunks
- 1/2 cup white chocolate chips
- 1/2 cup semisweet chocolate chips
- 1/4 cup sprinkles
Begin by preheating your oven to 350F and lining a baking sheet with Silpat or parchment paper.
In a medium bowl, combine your butter and sugar and mix vigorously until fluffy. Add the egg and vanilla, and mix well to combine fully.
In a separate, small bowl, whisk together your flour, funfetti cake mix, baking soda, and salt. Gently fold this mixture into the butter mixture, mixing just until no streaks of flour remain.
Into this mixture, add the crushed oreos, sprinkles, and both types of chocolate. Stir gently to combine, then scoop onto the prepared baking sheet, using a cookie scoop or a spoon to create uniform cookies. Bake for 10-11 minutes, until golden brown around the outside.
Let cool on the baking sheet for 2 minutes, then remove to a cooling rack to cool completely. Then, dig in! It'll be a party, no matter the occasion.
