Your standard oatmeal just got upstaged by this make-ahead breakfast that includes cocoa powder, sunflower seed butter, and chocolate chips - for breakfast! Make it the day (or 2... or 3...) before, so a delicious breakfast is waiting for you when you need it!
Once upon a time, I was a morning person.
I would bound out of my bed at 5:30 in the morning, every morning, mix up some pre-workout (aka literal crack, how on earth did I pass the drug test for my clearance?!), drive my little booty to the gym, and workout before heading into work. EVERY DAY. Even back in the day when I used to go on 3-4 dates a week, which was VERY exhausting and emotionally taxing.
(Now I just go to 4-5 happy hours a week, which is less emotionally taxing but probably much worse for both my liver and my wallet.)
That all changed near the end of last year, around the same time I realized I was miserable in my job and my living situation. Waking up to go to the gym just seemed unnecessary - I would go eventually. I was working from home, so I could go at lunch... or after 3... or before happy hour...
So, I would roll over in my bed, grab my laptop from my nightstand, and start my work from the comfort of my own bed. At some point I would get up and head to the kitchen to make breakfast - and then jump right back into bed. Although the siren song of my favorite coffee shop, The Coupe, beckoned from right outside my house, I couldn't put on clothes and makeup and get ready! I needed to go to the gym later!
And, if you've ever been in a similar situation, you know how this story ends. I never went to the gym, too encompassed by the cocoon of my covers and the rabbit hole of blog posts I found myself on as I actively avoided doing the work I hated. What a life to live.
Now that I'm in a job that I truly love, working with amazing people and doing interesting and creative projects, and living in the most incredible house/neighborhood I could ever dream of, I've gotten myself back on my grind (minus the pre-workout, which cannot possibly good for anyone's health in the long run). I now get up early, head to a spin or barre class at MINT, lift weights, then get ready and head to the office.
However, between my inability to spend less than 20 minutes choosing an outfit and the chaos that is 5 people in a tiny kitchen in the morning, it is almost impossible to make a healthy breakfast before I need to head to work. Enter - these overnight oats! I make a double batch on the weekend, portion them out into four tupperware containers, and grab one on my way out the door every morning. What could be better than that?!
Chocolate Sunbutter Overnight Oats
To make this recipe, you will need:
- 1/2 cup old-fashioned oatmeal
- 1 T chia seeds
- 2 T cocoa powder
- 1/3 cup dairy-free yogurt (I used Silk vanilla)
- 1 cup almond milk
- 2 T sunflower seed butter
There's one direction here, and it is... STIR. That's really it! Combine all your ingredients in a bowl, portion it out into two containers, set it in the fridge, and forget it. Go to brunch, throw a party, sleep, you do you, while you let these flavors meld and the oats and chia absorb the moisture.
In the morning, you can grab your oats and run to the Metro (me every day), or scoop them up into a little penguin Christmas mug, top them with an extra dollop of Sunflower Seed Butter and chocolate chips, and enjoy! (me for photoshoot purposes only)
