Everything you love about the classic s'more, rolled into a chewy chocolate chip cookie! Marshmallows, chocolate and graham crackers take this treat over the top for a perfect summer dessert.
Friends! I have a very very VERY important life-changing question to ask you all so I need your utmost attention.
Were you a camp kid?
...okay, okay, so maybe it wasn't THAT burning and I'm sorry if I got your adrenaline pumping, but it's a real question! I feel like, in my youth, camp was an incredibly formative experience. A source of first kisses, summer loves, crafting skills, and more.
And - perhaps MOST importantly - there were always* s'mores. Best enjoyed around a campfire, singing Kumbaya while a long-haired camp counselor played an acoustic guitar under the moonlight. How romantic!
*This was unfortunately not the case in my church's Music and Drama camp that I attended for like 7 straight years, but we did have an ice cream social at the end of the play so I'm not complaining. TBH I'd take an ice cream sundae over a s'more any day but please don't let that detract from this post because these cookies are dank I promise.
Let's be real - there is absolutely nothing more romantic than Jimmy Turner who you met during the polar plunge one morning blowing out your marshmallow after it was set aflame when you got it too close to the fire. Then, feeding each other s'mores and wiping the melted chocolate off each others' faces? STAHP. I can't. Getting allllll kinds of hot and bothered over here.

As I was strolling briskly through Trader Joe's this past Saturday, shoving people aside to get to the wine tasting section, I stopped right in my tracks when I spotted this campfire s'mores chocolate bar staring me in the face. It was then that I knew what I needed to do.
I needed to make these cookies.
Campfire Chocolate Chip Cookies
To make these cookies, you will need:
- 1 1/4 cup unbleached all-purpose flour
- 1/2 t baking soda
- Pinch salt
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 egg
- 1 t vanilla extract
- 2 Trader Joe's campfire chocolate bars, chopped
First, preheat your oven to 350F and line a baking sheet with parchment paper. Chop up your chocolate bar into small chunks - the more chunks, the better distributed the mix-ins will be in your cookies!
Next, brown your butter. Heat your stick of butter in a saucepan over medium heat, and stir consistently as it starts to bubble. After a few minutes, when those bubbles have subsided and amber bits have collected in the bottom of your saucepan, remove the browned butter from the heat and transfer it to a large mixing bowl to cool.
While the butter is cooling, whisk together your flour, baking soda, and salt in a medium-sized bowl. Into the butter add both sugars and mix well to combine. Whisk in your egg and vanilla extract, then add the flour mixture and stir just until combined.
Fold in your chocolate, then scoop the dough out in 2T-sized balls onto the baking sheet. Bake for 10-11 minutes, just until the cookies are beginning to brown around the edges, then remove them from the oven.
Let the cookies cool on the baking sheet for 2 minutes, then remove to a cooling rack to cool completely. Then, dig in!
Mmm, tastes just like camp. Now, if only I had the materials to braid some lanyards...
