Banana Bread Overnight Oats (Vegan & Gluten Free)

An easy, make-ahead breakfast featuring hearty oats, flaxseed and bananas is the perfect thing to fuel you up for a long day! Just a few minutes of prep and you'll have breakfast ready to go all week long.

Happy Monday, friends! How was your pre-Halloween weekend?

Mine was absolutely ridiculous (as always), so Sunday Scaries were in full effect yesterday afternoons. This is one of those weeks where you thank God, Allah, Beyonce, and every other deity you can think of for the beauty of vegetables, water and make-ahead meals.

Knowing I had these delicious Banana Bread Overnight Oats ready to go this morning was the only thing that helped me roll out of bed, heat up water for my French Press, grab a spoon, (load up that spoon with peanut butter), and dig in. It's all the flavor of banana bread without the prep time, 60 minute bake time (SOS), added sugar, and all that jazz. Take just 5 minutes to mix it all together and split it into tupperwares, then reap the rewards of your preparation all week long!

Is this what being an adult is like?

*Thinks about 30 minutes I spent crying this Saturday because my Uber driver wouldn't drive me to Charlottesville to get a Cookout milkshake*

On second thought, maybe not.

Banana Bread Overnight Oats

To make two servings, you will need:
- 1 banana
- 1 cup old-fashioned oatmeal
- 1 cup almond milk
- 2 T flaxseed meal
- 2 T honey (or agave) (or maple syrup)
- 2 t vanilla extract
- 2 t cinnamon

Mash your banana in a small bowl. In a larger bowl (or this snazzy beer stein), mix all your ingredients together well.

Separate out into two containers, then stick in the fridge and go about your life until the next morning! Simple as that. Feel free to double or triple the recipe but just remember there's banana in there so it will get brown. Ah, nature.
