Hi friends!! How was your weekend?
Mine was a whirlwind of fun, beginning with the Kesha concert on Friday night. As soon as 5 o'clock rolled around, I shut my work laptop, gathered every ounce of glitter available in my house, and got to work on my makeup.
Now, I've been a Kesha fan since she burst onto the scene in 2010, encouraging my high school self to begin brushing my teeth with Jack Daniels, a technique recommended by 9/10 dentists. This concert was, thus, a long time coming - although very different than the vibe of many of her concerts before.
If you haven't listened to/read about her new album Rainbow, I highly recommend that you do. Essentially, Kesha wrote the album while in rehab for her eating disorder. She begged and pleaded to be allowed access to an instrument - any instrument - and, after much fighting, was allowed one hour a day with a piano. That one hour is what kept her going, the ability to write music. She calls Rainbow the album that saved her life, and that's so incredibly powerful.
Despite the obvious differences (i.e. I'm not famous and will never be as cool as her), Kesha and I have had a lot of similar life experiences. We got the same SAT score (don't ask why I know this) and have both struggled with eating disorders and sexual assault. This is what led to me at 2 AM, post-concert/bars, sitting on my floor with a Jimmy John's sandwich, entranced in Kesha interviews. It's fine I'm fine.
So, before I launch into this completely unrelated but super delicious recipe, I'll leave you with my favorite quote from the album:
We may have times when we feel incomplete and broken, but that doesn't make us any less perfect or beautiful. And it's nothing that can't be solved by some self-compassion or a melty brie-filled grilled cheese.
Ehem, ANYWAY, this grilled cheese was originally inspired by a peach-goat cheese panini I had in Knoxville... but peaches aren't in season, and brie goes better with apples... so this isn't anything like that sandwich OTHER THAN being absolutely freaking delicious. Make it now!!
Apple & Brie Grilled Cheese
To make 2 sandwiches, you will need:
- 1 T butter
- 4 slices sourdough bread
- 1 apple
- 1/4 wedge brie
- 1/4 cup apple cider jam (from Trader Joe's, I imagine apple butter would also work well)
- 1 handful baby spinach
Now, this being a grilled cheese sandwich, the instructions couldn't be simpler. Begin by laying out your bread and spreading both pieces with apple cider jam...

Adding a handful of spinach to each sandwich...
...then closing the sandwich and buttering both sides!
Heat a skillet or panini press to medium high, then add your sandwich and get a good sizzle going. Cook on one side until golden brown, then flip and repeat on the other side. Once it's all browned up and your cheese is gooey, slice and serve! Preferably with a side of tomato soup.
Comfort food at its finest. Now if only fall weather would get here, so I could wear a sweater while eating this instead of a sports bra...
