Salted Walnut Chocolate Chip Cookies

A classic chocolate chip cookie is taken up a notch with the addition of walnuts and sea salt, adding a salty crunch that makes these cookies absolutely irresistible. The masses will be knocking down your door just from the smell!

That's right, it's been a full 366 days (leap year, y'all) since, as a result of what was almost definitely a clerical error*, I walked across a stage in our basketball stadium, smiled and waved and didn't fall (#blessed), and snatched my diploma out of my Strategy & Systems professor's hand.

*There's actually not a chance I passed Advanced Corporate Finance, but... Ds get degrees??

Now, people always said "college is the best 4 years of your life!" which is a great way to make a 21-year-old girl question every. single. one. of her life choices as she approaches the cusp of 'the real world.' But, I gotta be honest with you, mostly because I don't like secrets between me and the internet (unless it's my search history after a night of binge drinking, which includes things like 'what can I catch from a toilet seat???' and 'where can I buy a tiny giraffe? NO PRICE IS TOO HIGH').

THE REAL WORLD ROCKS.

Like, seriously. Replace homework with happy hour, and frat party DFMs with real dates (#menarewallets2016), and $2 Trader Joe's wine with... $4 Trader Joe's wine... ok, I haven't changed that much. But, I AM unquestionably happier now than I was at the end of my 4th year. It's a great feeling. So, to anyone who just graduated, or is about to graduate, get pumped. The real world will welcome you with open arms. And I will welcome you with cookies.

That was kind of a pathetic transition, but I'm GIVING YOU COOKIES, so calm your tits. I mean that in the nicest way possible.

Salted Walnut Chocolate Chip Cookies

To make these cookies, you will need:
- 1/2 cup (1 stick) unsalted butter
- 1/4 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 egg
- 1 t vanilla extract
- 1 1/4 cup all-purpose flour
- 1/2 t baking soda
- Pinch salt
- 3/4 cup dark chocolate, chopped
- 1/2 cup walnuts, chopped

First up, turn on Sheryl Crow. As she once said, "If it makes you happy, it can't be that bad" and she was talking about these cookies so just do it. Then, preheat your oven to 350F.

Next, you're gonna brown some butter. Heat your stick of butter in a saucepan over medium heat, and stir consistently as it starts to bubble. After a few minutes, when those bubbles have subsided and amber bits have collected in the bottom of your saucepan, remove the browned butter from the heat and transfer it to a large mixing bowl to cool.

While the butter is cooling, whisk together your flour, baking soda, and salt in a medium-sized bowl. Chop your chocolate, chop your walnuts, sing some more Sheryl.

"If it makes you happy, then why are you so sad?" ...because you can't eat the cookies yet, obvs.

Into the butter, you will add both sugars, the egg, and the vanilla. Mix these thoroughly, then add the flour mixture, stirring until just combined.

Finally, add the mix-ins! Stir to combine, then scoop in large balls (2-3 T each) onto a lined cookie sheet.

Bake for 10-12 minutes, until golden. Seriously, you'll be able to tell when they're done, mostly because you won't be able to wait another second to eat them. But, sadly, you have to... at least let them cool for 10 minutes so you don't burn your mouth! Here, give them a light sprinkling of sea salt in the meantime, for flavor contrast.

Then, dig in! And share them with everyone you love. I brought one to a friend and he deemed it "like crack, but better" and then followed that up with "so, you can bake like this, but you can't cook?!" and now I have a new life mission.

...culinary school, the next best four years of my life? Only time will tell.
